There’s a lot of them. But now that the kids are out of the house and doing their own thing, Julie and I have noted that our meals have gotten simpler.
Breakfast (at least for me) is almost always oatmeal. Occasionally I’ll chop a banana into it or toss a handful of blueberries. Cinnamon is a must. It’s good for you, or so they say.
Lunch for me is simple as well. Soup and sandwich. That’s been my staple meal for years, and I power through peanut butter and jelly. Julie has sausage, crackers, and cheese.
Supper is our big meal. Here’s a few we like.
QUICK AND EASY:
Toss a potato in the microwave and nuke it. Put it in a bowl, cut it in half and spoon a generous amount of Wolf Brand Chili onto it. Add some diced onions and shredded cheese to it and enjoy.
NOT SO QUICK AND EASY
On Sundays, we follow the American tradition and have a roast. Of course, there’s always something left over. So I put it in beans. Most recently, I did a mix of pinto and black beans. I put them in a bowl and let them soak overnight. The next morning, I put them in the crock pot with beef or vegetable broth. I add diced tomatoes with chili, dice up the roast and add it in. Add salt and pepper and garlic, and it’s great. I’ve also diced up the carrots, onion, celery, and potatoes left over from the Sunday roast and added that in. Need more meat? Fry up some hamburger, season it well, and after draining MOST of the grease. Add it.
Bake some pop and fresh biscuits and enjoy.
Since this makes a lot, a good way to use the leftovers is to fill the bottom of a bowl with Fritos, pour the bean soup over it. Add a little shredded cheese on top. Enjoy.
